Ship to Shore Restaurant & Lounge
Ship to Shore Restaurant & Lounge opened in May of 2009, in Darnley, overlooking Malpaque Bay. The building itself is about 40 years old, and has had several restaurants within it. At one point, it also housed a large bar, called the Ship to Shore Lounge. When partners Stephan Stewart and John Bil decide to purchase and renovate the facility, they made a decision to go back to that name, and the look and feel o fthe restaurant echoes that era. It has a very laid-back atmosphere, and live music is featured several nights a week.
The food however, is taken very seriously there. Presentations are clean and spare, with the emphasis placed on freshness, correct sourcing, and handling. Correct technique is paramount. John makes daily trips to suppliers: produce, fish, shellfish, meat. He spends hours every day purchasing ingredients. Not an easy way to run the restaurant, but it ensures the integrity of what goes on the plate.
This attention to detail has paid immediate dividends: mentions on several year-end "Top 10" lists, being named "One of Canada's Best New Restaurants", as listing in "Where to Eat in Canada" in 2010, and more. The simple fresh approach struck a chord with media, and with foodies everywhere. Hour-long lineups are not uncommon, and many are turned away, at the height of the season.
